Harvest period: from October until the beginning of December
Storage and extraction: Olives once harvested are placed in 20 kg perforated crates and are transported to the oil mill on the same day. They are immediately processed in our oil mill by the cold extraction method with a controlled temperature that does not exceed 27 ° C.
Conservation: takes place in small steel tanks. After the second decanting, the oil is bottled.
