Mare e Monti Line
“Mare e Monti” tells of a family, our family, who has owned for centuries an olive grove of about 4 hectares where 1000 olive trees of mixed variety between Gentile di Chieti, Leccino, Moraiolo and Leccio del Corno grow.
The olive grove is surrounded by our districts where there are magnificent scenarios with better southern exposure at the highest point so that the build-up of humidity, which is not tolerated by our olive trees, is avoided. Our soils are well drained and of medium consistency enriched with good doses of organic substances ideal for cultivation of the European Olea. The olives produced with passion and daily dedication by our family are harvested in the months from October until December, considering the best moment to be the one in which the process of ripening (the change of the color of the fruit from a green color, to violet, to black) is at 50-60% of the cycle. The olives are harvested manually and by means of pneumatic harvesters with extendable rods reducing the risk of damage to the plant and olives.
On the palate there is a pleasant perception of softness; the feelings of bitter and spicy are slight and balanced between them, everything is well proportioned without giving rise to disharmonies. This oil is suitable to those looking for a delicate and decisive seasoning, as well as aromatic and savory, because It has very low levels of acidity, a very intense aroma and a rich flavor that stimulates and enhances the taste perception of the dishes on which it is used. Suitable for flavoring soupslegumes, bruschetta and salads, but also widely used in the pan and on baked goods.
